Honey Cream Scones

Hello All!

Here's a tasty recipe for you today.  We love scones around our home.  They make a delicious breakfast and they always come together so easily!  These scones are no exception.  The recipe for these Honey Cream Scones can be found here from the June 2011 edition of Midwest Living.

The scones start out with two of my favorite things:  lemon and thyme.  I can't get enough.  Those two ingredients were what drew me to this recipe.

I love the smell of lemon zest!

All of the dry ingredients are mixed into a big bowl.

After you add the butter and the wet ingredients, you stir until it is moistened.  The dough will be sticky, so have a pastry scraper handy (or a knife in my case because my pastry scraper was in the depths of my drawer and couldn't be reached with my messy hands).  Here is my dough after kneaded and rolled into a 12 inch circle.

The recipe calls for brushing some extra whipping cream on top before baking.

As I read through the recipe, I had the feeling that the scones wouldn't be sweet enough for my sugar-loving boys.  I solved the "problem" by mixing a 1/4 cup of sugar with some extra lemon zest.

I sprinkled the sugar/zest mixture on top of the scones.

4th of July Fun

Our 4th of July was pretty simple this year.

We ate corn on the cob and sandwiches for lunch.

We went out for burgers and custard with my Mom, sisters Amelia and Liesl, and my brother-in-law Ryan before the fireworks.  Hefners is one of our favorite places.

The town where we watched the fireworks is so cute and quaint.

Before the fireworks show we listened to a band play patriotic music.  The atmosphere was so fun.  Little children ran around on the grass wearing red, white, and blue.  Couples and families sat on blankets, enjoying one another's company.  Everyone seemed genuinely happy.

After it got dark we enjoyed some of the best fireworks I've ever seen.  Obviously, the pictures don't do them justice!

Happy belated 4th of July, everyone!  May God continue to bless America, the land that I love!

Our Friendly Pineapples

Hello, Friends!

We found these gray pineapple finials on clearance at our Target store a couple of days ago.

They were in the outdoor area, but we're putting them in our dining room.

We paid eight dollars a piece for them.  That's not a bad price considering the fact that Restoration Hardware sells some very similar to ours for eighty-nine dollars.

They add a little visual interest above both cabinets without being too cluttered, don't you think?

Pineapples are considered to be a symbol of welcome, friendship, and hospitality when found in a home.

I hope everyone who comes into our dining room feels welcomed by our pineapples.  :)

Six Years and Counting

Jason and I have been married for six years.  I still love him and I always will (ooh-la-la!).  In church the morning of our anniversary the Pastor prayed for a couple who had the same anniversary as us.  They had been married for sixty years.  Sixty years!  What a blessing.  I pray that I can be married to Jason for that long!

Later on in the day we dropped the boys and a pizza off at our sister and brother-in-law's downtown apartment for a few hours so that we could have a little evening to ourselves.  It was wonderful.

The restaurant where we ate is located on a river.  We ate outside and got to see all of the rich people dock their huge boats and then come have some dinner.

There's the Bronze Fonz!  You know, the guy from "Happy Days."

As the Fonz would say, "Hey!"



Happy 6th Anniversary, Jason!  Let's try for sixty years, shall we?

How They Roll Around Here

Sometimes Henry and Oliver ride their tricycle this way.  Their trick makes us laugh every single time.

There is never a dull moment with these two around. 

They are such a blessing.  Having children is the best!
